Add salt pork. Simmer for 1 hr.
Drain, reserving liquid. Remove salt pork and cut into 1 in. cubes. Pour beans into bean pot. Bury salt pork in beans. Add onion, brown sugar, molasses, catsup or tomato juice, dry mustard, and 2 cups of bean liquid. Bake at 300° for 6 hours, adding water if needed during the last 2 hours.
