Chicken Parmesan

Heat oven to 350 degrees.

Beat the eggs with the water in a small cup and pour into shallow dish. Pour flour into another shallow plate. Season with salt and pepper. Mix bread crumbs with grated parmesan cheese. Pour into third shallow dish. I use paper plates that have a little lip and a coating.

Heat tomato sauce until very hot. If you have a warming burner on your stove, put a suitable plate with paper towels on it and turn it on. (this keeps the chicken from getting soggy). Heat a little of the olive oil in a non stick pan adding more as needed.

Dip each chicken piece into the flour mix, then the egg mix, then the bread crumb mix being careful to keep one hand dry. Place gently into the frying pan. Don't crowd pieces. Keep doing this until the pan is comfortably full. Turn to the other side when golden brown then remove to warming plate.

Cover bottom of a large casserole dish with hot tomato sauce. Add chicken pieces in an even layer. Heat in pre heated oven for about 20 minutes or until it starts to bubble. Cover with cheese and bake an additional 8-10 minutes checking frequently until cheese is totally melted.
