Cajun Scallops with Roasted Red Pepper Pesto

Drain red peppers. Put roasted red peppers and next 4 ingredients in blender and puree. Slowly add olive oil. Transfer mixture to saucepan. Cover and warm over very low heat.

Rinse and pat dry scallops. Dust with cajun spice, paprika, and thyme. Heat a heavy duty frying pan over high heat. Spray pan with vegetable spray. Add prepared scallops and sear them for 2 minutes on each side. Reduce heat to low and squeeze lemon over scallops. Cover and cook for 5 minutes, until scallops are firm.

Pour red pepper pesto over scallops and serve with pasta or rice.
