PC Mandarin Orange Upside Down Cakes

Preheat oven to 350. Lightly brush muffin cups with melted butter. Add brown sugar to remaining melted butter. Stir until smooth. Divide among 12 muffin cups. Place one cherry in each cup. Arrange orange segments equally among cups. Divide remaining butter/ brown sugar mixture and divide among cups.

To cake mix add egg and 1/2 cup orange liquid. Mix until smooth with whisk. Divide batter evenly among muffin cups.

Bake 25-30 minutes until golden brown and toothpick inserted in center comes out clean. Loosen cakes with tip of knife immediately and invert onto platter. Cool and enjoy!
