Donna Rondeau's Indian Pudding

Palmer, MA

Scald 3 cups of milk in the top of a double boiler. In a separate bowl mix remaining milk with 1/2 cup of cornmeal. Stir into scalded milk. Gook over gently boiling water for 30 minutes, stirring often.

Beat eggs in 1 1/2 qt. baking dish. Add maple syrup, molasses, cinnamon, and ginger. Stir in hot cornmeal. Place dish in a larger pan with hot water poured in it. Bake at 350° for 1 hour or until center is firm. Serves 8 to 10.
