Custard Cream Filling for Cream Puffs

• 1/3 c. flour
• 7/8 c. sugar
• 1/8 tsp. salt
• 2 eggs or 4 egg yolks, slightly beaten
• 2 c. milk, scalded
• 1 tsp. vanilla or 1/2 tsp. lemon extract

Mix dry ingredients. Add eggs and milk. Stir until smooth. Cook in double boiler for 15 minutes or until thickened, stirring constantly. Allow to cool. Add vanilla or lemon extract.
