Pancakes

Mix dry ingredients together in a medium bowl. Combine egg, milk and salad oil in a small bowl. Add all at once to dry ingredients, stirring until just moistened. If batter is lumpy, wait 5 minutes and stir briefly. Bake on hot griddle. (To test griddle, flick a couple drops of water onto hot griddle. If they dance arounds a bit before they evaporate, Griddle is hot enough. You can do a test pancake, too!)
