Diet Streusel Coffee Cake

Preheat oven to 400° F. Spray a 9-inch square baking pan with nonstick cooking spray.

In a small bowl, combine the brown sugar, walnuts, cinnamon, and 2 tablespoons flour. Add 1 tablespoon of the butter mixture to the walnut mixture and stir until crumbly.

In a large bowl, stir together the remaining 2 cups flour, the granulated sugar, baking powder, and salt until combined. Make a well in the center. Add the egg, buttermilk, lemon peel, and remaining butter mixture. Stir until just combined.

Scrape batter into the prepared pan. Sprinkle with walnut topping. Bake for 40 minutes or until a toothpick inserted in the center comes out clean. Allow cake to cool.
