Cherry Scones

Adjust oven rack to lower-middle, and preheat to 400°.

Mix flour, 1/3 c. of sugar, baking powder, baking soda, and salt in a medium bowl. Coarsely grate butter into the flour mixture. Work butter into flour with your fingers until it resembles coarse meal. Add cherries.

Whisk sour cream and egg in a small bowl until smooth. Stir sour cream mixture into flour mixture until large clumps form. Use your hands to make a ball out of the dough. (It may not look like there is enough liquid, but keep working!)

Place on floured pastry cloth and pat into an 8 inch circle (3/4 in. thick). Sprinkle with 1 tsp. of sugar. Cut into 8 triangles and place on parchment paper lined cookie sheet, about 1 inch apart. Bake until golden, about 15-17 minutes.
