Parmesan-Basil Popovers

Spray the bottoms and sides of six 6 oz. custard cups, and place them on a 15 X 10 X 1 inch baking pan. Preheat the oven to 400°.

In a mixing bowl combine beaten eggs, milk, and cooking oil. Add flour, salt, Parmesan cheese, and basil. Beat with electric mixer until mixture is smooth. Fill the greased cups half full. Bake for 40 minutes or until very firm.

Immediately after removal from the oven, prick each popover with a fork to let steam escape. Then, if crisper popovers are desired, turn off the oven, and return the popovers to the oven for 5 to 10 minutes. Serve hot.
